The bottle description states that the Single Hop series showcases beers usually used for bittering, not flavoring. I'd say this IIPA makes a great case for the Apollo hop being ready to come into its own, and not depend on the kindness of other strange hops for support.
The beer pours a bright amber with a clear, well-carbonated body and nice foamy head.
The smell has a hint of honey under a rich citrus character, and a firm-enough malt backbone to bring down the bitterness of the hops. A bit of peach and pineapple in there too.
Taste is similar, but less fruity and more pronounced malt. Still very malty, and only the slightest hint of bitterness in the grapefruit rind finish, but that's what sticks around.
The feel is a bit sticky and thick, and really nicely foamy and creamy in texture. It's possible I sat on this beer too long before drinking it and the hops are less potent than they could be, but damn, if this isn't a tasty one regardless. Find it and drink it!

It has a honey hue. It taste a bit bitter and sweet it has a slight peach smell to it. Its fairly light and a bit foamy. It's a great beer to pair with a sandwich.

Poured into IPA glass. It poured a golden honey with peach hues, with a thin, bright white head and minimal lacing. The color is very attractive. It smells both fruity, with peach and pineapple, and piney. This ale nicely blends sweet and bitter flavors. The peach, pineapple, and grapefruit work well with the hoppy pine. It starts sweet and finishes fairly bitter. This ale is lightly carbonated but has a noticeable alcohol burn. Overall, Flying Dog has produced a an IPA that it interesting, tasty, and fun to drink. Someone looking for a hop bomb might think Apollo isn't bitter enough but I really liked it and would drink it again.

A: hazy orange to almost amber
