Instead of hops being added to the boil, we used botanicals. Fresh Citrus Peel, Rose Hips, Pink Himalayan Sea Salt, Dandelion Root and an enormous amount of Topaz hops in the fermenter. The result is a slightly fruity, slightly tart beverage.
