Collaboration with Payette Brewing Company
The beer is brewed in the (mostly) traditional Berliner Weisse style, employs a grain bill of half wheat and half barley, is soured with Lactobacillus, and weighs in at a thirst quenching 2.8% ABV. Add to this a whopping two-and-a-half pounds per barrel of delicious Idaho-grown huckleberries and you have the perfect antidote for these hot summer days.
Elysian and Payette’s Huckleberry Berliner Weisse is light, tart, and bright freakin’ PINK!

Electric pink color is initially shocking. Berlin Weiss through and through , huckleberries add just enough sweetness to temper the sour nature. Really , really nice.

Had this on tap at Elysian. It was so sour it was nearly undrinkable. Not for me at all.

On tap at Payette tonight.... Really happy I got a chance to try this one fresh. Pours an amazingly bright pink, it turns neon when backlit. Thin white head leaves no real lacing, but despite that this is a real looker.
Nose shows good traditional lactic funk that is washed in tart huckleberry... The aromas are really well done.... Smells like it really did have a lactic fermentation or a sour mash.... Soft wheat malt essence is there, but just enough to remind you of the Berliner backbone.
Flavor pretty much mirrors the aroma... Thankfully not palate melting sour, just nicely tart and a little tannic from the dry/fermented out berries.. A small whaff of wheat if you concentrate on the finish.
Light body, incredibly drinkable despite the acidity... This is one of the biggest winners I have seen in a long time... Too bad it will never see bottles.
Edit: You can really tell they used real berries and not huckleberry or blueberry essence like a lot of fruit beers... Stunning and very natural.
