CASHMERE OAK JUICE (6.5%) is a light and very drinkable wild ale from a first fill of new oak barrels - the wood character is therefore very evident. I have tried to match with dry hops instead of diluting.

Copenhagen 2/9 2023.37,5 cl bottle from Mad & Vin, Magasin, Kbh. K. Observatoriet's usual label design in a version here green fades into yellow.
Pours opaque hazy pale yellow with big white head. A bit bubbly. Settles as thin, patchy layer of foam unable of covering the surface of the beer. Clinging to the sides of the glass. Moderate lacing.
Aroma is medium intense with a light sweet and fruity odor soon overwhelmed by a scent of tart, unripe berries. Sweet grapes and peaches. Tart gooseberries and currants. Light touch of vinegar.
Light carbonation. Slightly thick, oily, soft, lightly tingling texture.
Flavor is medium intense with a medium strong sweetness followed by a slightly stronger tart sourness. Aftertaste is sour with a sweet undertone. Lingers for a while. Finish is rather dry.
Pleasant Wild Beer with a restrained, gentle sourness.
