This exciting wild ale is a blend of big foudre beer, small barrel beer and a bit of fresh wild fermented beer.
To bring out the curious flavors of this blend, the beer was carefully dry hopped with modern German hops and finally seasoned tastefully to bring a final touch of complexity.

Copenhagen 24/5 2023. 37,5 cl bottle from BeerShoppen web-shop. Light green version of Observatoriet’s usual design with strange topographic lines.
Pours opaque murky amber with a small white head. A bit bubbly. Settles as thin layer of foam stretching to cover the surface of the beer. Clinging to the sides of the glass. Moderate lacing.
Aroma is medium intense with a light sweet fruity odor mingling with a more prominent sour scent. Currants and peach. Unripe gooseberries and grapes. Mild touch of coriander and funk.
Medium strong carbonation. Thin, oily, soft, lightly tingling texture.
Flavor is fairly intense with a light sweetness followed by a strong tart sourness. Aftertaste is sour and a tad watery. Lingers for a bit. Finish is dry.
Nice and dry. Not overly funky.
