This intense wild ale comes from a big foudre. The beer itself is very clean and sparkly, though still full of character. A selection of beautiful, tropical hops in the form of Lotus sets this ale apart from traditional wildly fermented beer, and a small spice addition brings a peppery note. Enjoy it on a sunny day or with light dishes of fish, poultry or asian food.

Copenhagen 18/4 2023. 37,5 cl bottle from BeerShoppen web-shop. Light orange label stating name of beer and brewery.
Pours unclear - almost opaque - pale yellow with a mid-sized white head. A bit bubbly. Settles as thin, flimsy layer of foam unable of covering the surface of the beer. Moderate lacing.
Aroma is medium intense with a lightly fruit and sweet odor mingling wit an austere dry bitter scent. Sweet peach and strawberries. Citrus and unripe berries. Vinegar.
Medium strong carbonation. Thin, oily, lively, tingling texture.
Flavor is medium intense with a light sweetness followed by a stronger tart sourness Aftertaste is sour with a sweet undertone. Lingers for a bit. Finish is rather dry.
Sour and dry without going to extremes.
