This wonderfully decadent fruited wild ale was made as a collab with Dear Hill Brewing.
The main part is wild ale matured on Chardonnay barrels for 12 months, meanwhile blackcurrant juice was fermented with house Brett cultures. In blending we decided to add a touch of "Tableau" to further enhance the freshness of this beer.

Copenhagen 28/9 2025. 37,5 cl heavy glass bottle from Kihoskh Sønder Boulevard, Kbh. V. Red version of Observatoriet's usual design with a straightforward present of the name of the beer and brewery.
Pours unclear burgundy with a mid-sized white head. Abit bubbly. Settles as a thin patch of foam floating in the middle of the glass. Moderate lacing.
Aroma is fairly intense with a sweet odor of ripe currants and a hint of cherry mingling with a tart and funky scent. Sweet fruit and a bit of sugar. Sour cheese. Citrus and tart gooseberries.
Light carbonation. Slightly thick, oily soft, a bit viscous and lightly tingling texture.
Flavor is fairly intense with a medium strong sweetness followed and balanced by a medium strong tart sourness. Lingers for a while. Finish is dry yet fruity.
Fine tart yet well-balanced berry brew.
