I had this beer on-tap in a snifter at WABL Belgianfest 2015. This is the version aged with oak staves.
Appearance: very standard dubbel look: dark, rich amber with a light-to-moderate haze and a thin layer of tan foam. Attractive and approachable!
Smell: sweet and ambery, with caramel, breadiness and a little biscuitiness. The oak and bourbon characters hinted by the staves do not really come through, but still not bad.
Taste: sweet and lightly caramelly with a little butteriness and biscuit. Unlike the aroma, there's a little bit of oak and vanilla in there, but it doesn't really improve the dubbel a whole lot.
Mouthfeel: medium-rich body with a good carbonation and a good creaminess; I like the texture a lot.
Overall: I feel like the oak doesn't add a whole lot to this dubbel, which isn't bad but is hardly a world-beater.
