A massive volume boiled down over eight relentless hours. What started as a clean malt base evolved into something dense, layered, and just a little unhinged. Centennial hops were added late, shifting from sharp citrus to rich resin. Too complex to plan, too good to forget.

At Gastropub on Erie Street East in nearby downtown Windsor; on tap and chilled, 4oz. in a flight of four beers. My fifth beer from the Windsor brewery, and for 2025.
