just my third from these guys, cool that they opened up a little taproom spot in idaho falls, should do well for them. thats where i posted up and had this one, a slightly heavier take on the style without much of the cold conditioned snap i like in these, but in the context of early spring and being able to handle a little more malt character and sweetness, its pretty solid. honey colored and pretty clear, but it drinks to me just a tad bigger than it looks, lots of carbonation, a little white head on it, some staying power, maybe slightly better than average on that, the high carbonation is necessary. aroma is a touch sweet, bready, european, some odd citrus and estery character to the ferment, not quite untidy but not crisp to me either, white florals and a bit of a springy vibe, which is how the flavor rolls too, grainy with a sort of graham cracker thing, some hops to this as well, and an almost stressed yeast thing, not the gentle fruity herbal character that is classic, this is approaching phenolic as it warms a bit, and to me is just a bit nontraditional in that regard, even if i still like the way it tastes. not as refreshing as it could be, which is a part of kolsch i look forward to, so with that missing this ends up middle of the road for me, decent but there are far better regional options, certainly. neat to see these guys doing well and expanding though, ill visit this taphouse again for sure, low key spot, nice tap list, guest beers too, good service. this isnt my favorite of their beers, but its passable.
