Originally brewed to celebrate the wedding of two Pelican employees, Pelican now produces a limited release of Bridal Ale as a fall seasonal for off-sale to patrons at their brewpub. The 2004 vintage was based on a biere de garde recipe. Pelican has listed information for this beer in at least two locations. One places it at 6.5% ABV and 25 IBU, the other at 7.1% ABV and 31 IBU.

Bridal is bottled as a premium ale in green 750 ml punted champagne bottles. Bottles are foil wrapped, dated, and signed by the brewer. Each bottle is individually numbered. I drank bottle #354 of 450 from October 2004. The fist thing I noticed about the beer was that there was absolutely no ullage in the bottle. This lack of airspace produced no release of CO2 upon opening. Despite this, the ale emitted an uproarious surge of carbonation upon decanting and lifted a full three fingers of lumpy head atop its deep copper body. The aroma was light and appealing – like sliced apples and allspice one moment, and light buttered toast the next. The lace was whimsical and celebratious.

Bridal tastes dry with effete taste parameters. Its peppery spiciness, derived from American tettnanger hops, is genteel and convincing, never intrusive.
