Hey, it's a well made PALE ALE.
Hard to get excited, but a very competent example. And kudos to working outside the box. This beer is made with the first importation of the p09-5 hop hybrid from the French Alsatian hop nursery. And that's the best thing about it.
Highlights: Great mouthfeel, excellent drinkability, classic appearance.

Pelican dubs this a French ale, and claim it is the first beer made (in the US?) with an experimental French hop. Served in an imperial pint, Le Guillotine is a spritzy gold with a tight white head that leaves decent lace.
Smell is bright citrus hops, some malty sweetness and hints of sulfur and yeast.
Taste is almost all bittering hops, with almost none of that great citrus hoppy nose, very faint, with the bitterness accentuating a faint graininess. Pretty bland overall, and really disappointing compared to the smell, like they only added bittering and dry hops.
Mouthfeel is dry, with a medium light body.
Drinkability is easy enough going down due to the light, dry body, but it's just not that good, bland and bitter, although a bit better with the warmest last few sips, where the citrus peeked out.
