We can finally put to rest the delima of what to pair with Thanksgiving dinner. With a taste of that savory meal going stright into the glass- the taste that marry together are seamless!
Aromas are innocent enough starting with the true malt flavor of fresh baking bread, mild toast, and caramel... there it is- bullion! Savory in its portrayal and with a somewhat herbal cast of characters that span celery seed, chive, and orange.
Caramel flavor caresses the early palate with charming flavor of bread, bread crust, grain sweetness, and a mild marmalade fruitiness with zesty citrus taste. The follow a light brine settles in and provides a fuller taste with savory umami character. Just as the taste concludes, a quick echo of gravy reverberates on the taste buds and in the retro-olfactory sense.
Medium bodied, the beer should take on lighter proportions, but the residual caramel sweetness provides a moderate heft that offsets the rich impressions of vegitable stew. Lightening considerably as the beer finishes, the arid texture of minty alcohol and mild cereal grain come to life and closes the session with a semi-dry finish.
Remarkably, the majority of the beer flavors hardly recognize the mirepoix cooking technique. These flavors and aromas are more noticable in aftertaste and echos in aroma.
