actually a french pils, with both malt and hops from france in here, really unique and flavorful beer, while also still drinking like a pils, this would appeal to any fan of the style, but has a lot of nuance from these very uncommon ingredients, uncommon in the states anyway, they come together real well in this, and like all the beers ive had from bristlecone so far, its really high quality and professional, their lagers are hitting for me right now! sunny yellow colored and gorgeously clear and high shine, light but exciting and excited looking, a full inch of lasting weightless white head, looks right on. aroma is grassy and herbal from the mistral hops, a varietal i am only very loosely acquainted with, but i get nuances of dried chamomile and clover, summer meadow vibes without being too intense, but some bitterness there with it, almost french farmhouse a little bit to me, the grain is pure and light, but it has straw and breadcrumb character, is polished but kind of rustic too, certainly old worldy and with a unique personality, mellow as it is. they come together so well in the flavor on the back of good technical skill and attention to detail of course, nice crisp lagering, quick. the hops actually start earlier than in some of their other lagers but still seems modestly dosed overall, hints of heather and nettle, botanical without being like in bloom or anything, nicely supported by this earthy malt, distinctive in every way but so drinkable, i like the late bitterness, the rushing carbonation and fast pace overall, and i like the recall on the palate. this is great beer, i love intentionality with ingredients and this is that, well sourced and put together, drinks like a pils yeah, but this offers a little more to the beer nerd, and thats a sweet spot. among my favorites i had while i was in here!
