A Doppelbock brewed with honey and fermented with lager yeast to 7.8% ABV.
Pours a beautiful dark body that is a clearest ruby read when brought to a light source. Plenty of carbonations forms a light beige head of a few fingers and bubbles of all sizes.
Smells of dark bread, milk chocolate, red fruits, but all quite restrained and clean, no booze, roasted coffee finally.
Definitely tastes of chocolate, some dark malts of course, surprisingly dry for a Doppelbock, there is a balancing sour/bitter note as it leaves the mouth, maybe even a hint of Madeira at its tender age of probably a half year.
Mouthfeel is medium and carbonation is plenty at the beginning. After a while it becomes more smooth and less biting which suits it well.
A delicious Doppelbock that is as it is the style malt forward but not sweet with a little roast to it and balanced by bitterness that is more dominant than in more typical Bocks. A nice take on the style that I enjoyed a lot.
