Notes via stream of consciousness: A very dark body is capped by a finger's width of khaki colored foam that's made up of both tiny and larger bubbles. In the nose it's fruity, darkly malty, and a little bit herbal. The flavor bears that out displaying an even greater breadth of malt. It's sweetish, bready, softly caramelish, lightly toasty, and cocoa powder-ish. The head has dropped at this point but it's still got a thin surface covering and there's lacing all about the glass where the head once stood. The fruitiness is mainly like apple although there's a hint of sweet red berry to it, and some dried dark skinned fruits as well (raisins, figs, dates) as well. The hops remain herbal and a touch floral. A moderate bitterness balances it and it finishes drying as it goes with some residual caramelish, nutty, and milk chocolate-like malt fading to eventually leave minor notes of fruit, toast, and herbs behind. In the mouth it's medium-full in body and crisp. I'm a little surprised at how carbonated it is as some of their beers are much softer, and that would seemingly work well in a bock but perhaps I'm wrong. The lacing has remained nice but the head retention should have been better, and I'm also surprised at how fruity it is. I personally don't mind it, but you don't expect it to be so strong in a bockbier.

Look: Dark brown. I cannot comment on the head because I made the mistake of pouring my beer to the brim of the glass.

St M is the second beer from that Costco Germany pack. The beer is 10 months old and has a shelf life of one year, like the last one I consumed. I am using a pokal glass and serving the beer at 42 degrees. The pour created a frothy, creamy two-fingered light tan head with exceptional retention. The slow dissipation left chunks of lacing on the glass. The color is mahogany brown with a reddish hue; the clarity is semi-opaque, and the SRM is 24.
Nosing the beer, I detect notes of caramel, prunes, raisins, dark toasted bread, light char, with a light hop floral profile.
Sipping the beer, I taste toasted malts, light floral notes, raisins, earthiness, dates, caramel, breadiness, and light minerals, finishing with a bit of Maillard.
The mouthfeel is soft, finishing crisp and dry. The body is thin with medium carbonation.
Final Thought: I have mixed feelings about this beer. It is a solid Dunkel, but I wanted more depth in the flavors. The beer does have a light char/Maillard note on the backend. St. M is an average beer; it has potential for greatness.

In the past I have not cared for dunkel bocks, and I didn't care for this either. It has a rough feel and a malty and not pleasant taste. I did finish it but would not pick this again.

Clear dark red-brown brew with plenty of foam in the goblet. This has that "off" smell that is so detrimental to sweet wheat brews. It tastes like some bacteria found the residual sugar and are working behind the scenes to make it their own brew. Tastes of roasted grain and sweet caramel but also dishwater and a hint of sourness. The bitterness is starting to grow in this science experiment. From the 500 ml can dated 01/04/2025.

From the pint can in the 2025 Biergarten Collection from Costco, it pours a clear mahogany color with a nice off-white head that slowly reduces and leaves lacing. The nose gets a sweet scent of malt. The mouth follows with a sweet, malty, slightly caramelly, roasted malt brew that drinks easily.
