At the centre of this Imperial IPA is a solid foundation of Canadian 2-row barley with a dash of Canadian Toasted Wheat. Around this foundation we will pivot the hops from batch to batch as we experiment and play with different hop varieties.
Pivot #12 (January 2018)
Pivot #12 is here and it is SOLID! It's got quite a bite though is very balanced. It was brewed with just two hops: our old trusty friend Cascade, and (a lot of) CALIENTE! There's definitely some grapefruit and citrus on the nose though the bitterness takes hold immediately after you sink into your first taste. That bitterness quickly steps aside and makes room for some sweet citrus and almost peachy flavours that all get blanketed by a fairly assertive floral character. It sort of tastes like spring tbh... If only...

Nice foamy head. Nice color. Smells a bit musty. Tastes a bit musty. I'll drink it all but not buying again. Grain load is not heavy enough to be an imperial. I like to cut my imperials with a knife. This beer might cut me.

Hazy dark gold with a good head. Light grassy nose with a slight citrus hint. Crisply carbonated over a muted malt body. Slight hint of high ABV.

Hazy and slightly cloudy golden color with low activity. Thick creamy beige 1-2 finger head, lasting around 10 minutes, with average legs and swirl reaction. Flavors of butter, caramel, sea weeds, sweet grains, floral and herbal hops. Medium strength finish, highly buttery with a moderate hoppy leafy autumn feel. Too much maillard effect making the hops kinda dull and weird. Alcohol is well hidden though, freshness is alright. Overall above average quality craft.
