this is a beer of the year candidate for me, as wonderful and unique and high quality as it gets, i live for beer like this. it appears to be double listed here on BA as well, with the sparkling infused portion dropped from the other listing, but i do not believe there is more than one version of this, gorgeous bottle, didnt even know this existed until i encountered it on a special beer menu, served in a lambic basket, proper. not much color from the rose, maybe a light pink, but we are drinking this in a dim bar and its hard to tell, subtle haze apparent, pretty sparkling white head, lots of life to this, it immediately feels special to me. the nose, oh god the nose! its fresh red rose, silky soft sexy petals, and mature woody funky amazing lambic together, and its mental, notes of champagne, musty basement, cranberry, high end perfume, lemon, old brett and oak together, vanilla bean, raw wheat, and some bacterial tartness, mouthwatering to an insane degree, cant believe how fresh and forward the rose is, such a contrast to the well aged base beer, this hits for me before i even taste it! the flavor is even more ramped up, but this isnt over flavored, and part of it for me is how authentic it is, like this isnt rosewater, or some kind of essence, its the real actual flower, its so pure and so preserved in this, amazing. and its high oud beersel funk in the base beer, which is familiar and glorious, but with the rose its like im appreciating it for the first time all over again, more brett than acid to me, grain in tact, some body here but made to feel delicate with the effervescence and also how dry it ends up. white wine abounds, lemon too, cedar wood, heaps of funk, so floral and alluring, i just cant get enough. as good as any lambic ive had in a long long time, maybe ever, and frankly i love seeing the less traditional ingredients finding their way into these, even from the old school producers, its just a whole new world out there. this is absolutely magical!
