This is one special beer. It was brewed using a HINT (do not panic) of raspberry, apple and fine cheese. I told you not to panic! But you did anyway. This is a great offering from Bristol. I tasted it at Kinfolk's in Manitou Springs Saturday with my friend Marty Saylor from Stone Brewing, and was captivated. A wonderful luminous gold color in appearance, it has a floral/fruity bouquet reminiscent of a German Riesling wine.The initial taste is a soft, perfectly carbonated, velvety combination of tart apple, berries and a creamy flavor I could not identify until they said it was cheese. Go figure. The mouthfeel is great, the middle is well balanced and spicy, the finish is clean and dry, like a nice Chenin Blanc. Notice the wine references - this is more of a wine than a beer. Kudos Bristol!
