This oak aged Brettanomyces Old Ale used two Cognac Casks from the original 2014 batch plus some aged in Merlot barrels evolve for 20 months in oak. A careful blend of these casks and barrels brings you the final release of this one off beer we made with our friends at Rocky Mountain Barrel Co. Released in 12oz bottles with gold wax.

Poured on tap at Yazoo Brewery in Nashville, TN.
Pours a dark, ruby red/brown color (similar to what a Belgian Flanders Red looks like) with a thin, white, frothy head that remains around the edges of the glass as I sip. Visible lacing all around the glass as I sip.
Smells of brettanomyces, VERY funky but not barnyard funk, it's almost phenolic. Perhaps a hint of cherry detected and hints of French oak (maybe in red wine barrels?)
Tastes initially a bit tart and then turns into funky and then actually has a nutty finish to it. Almost tastes like I just ate a handful of almonds. I taste a high amount of malt content as well as the beer is sweet, but that oak is present. Maybe some Bing cherry in there but not a lot and not similar to like what a kriek would taste like.
Mouthfeel is overall quite satisfying as there are a number of flavors that dance around on your palate.
Overall a very interesting brew. I have not had anything quite like this before in the realm of the American Wild Ale style. I would try this again and I'd be curious to see how this progresses with aging.
Cheers!

Extremely complex beer with cognac barrel and the merlot barrel both lending favorable attributes. Most noticeable flavors are cognac, funk, and oak.
