A Pale Ale 100% fermented in neutral French Oak for 1 year with a unique strain of wild Tennessee Yeast isolated from bee pollen. A secondary fermentation with raw honey from a family farm in Arkansas and cinnamon add a bright spicy character to this hybrid beer.

Take this review with a grain of salt as this is my first braggot. Poured into a tulip. A nearly clear golden color with a very transient head that left without a trace. Beautiful smells of fresh honey, sour apples, cinnamon, and brown sugar. The taste featured honey early on, but just a flash and not sweet of cloying by any stretch. Nice notes of cinnamon, sour apples, faint oak, and vanilla. Mildly sour with a comfortable surrounding funk that is more of a feel than a flavor. Medium-to-full bodied with a crisp apple-pie finish.
