Putting a tropical wetlands spin on the Belgian styles wheat beer, the Yazoo brewers use the tropical wetlands of the Everglades for inspiration in spicing this fruity, peppery and soothing style.

Pouring a pale straw with a confident haze, the ale settles with a falling froth that casts a host of spice, grain, citrus and herbal aromas across the nose. Sweet with cereal grains, a taste of whole wheat and a kiss of sourdough roll onto the tongue with hints of cookie dough.

As the middle palate unfolds, the sweetness fades and the spices come forth. A smooth pillow of malt persists and helps to support the herbal array of white pepper, sawgrass, spruce, tea and tonic while a fruitiness of lemon, apple and orange tease the senses with a juicy potpourri of succulence. Lightly bittered, the finish trails into a medley of cereal, grasses and pine.

Medium bodied and developing a creamy dry closure, the beer's finish is minty, herbal and tied together with citrus peels. A light grain derived astringency and reserved spice regimen give a perfumy and earthy aftertaste that's medium length but sings refreshment.
