a really ambitious beer from the process side, but im not sure the final product really rewards the work, like, eight different barrel aged beers is a lot in one blend, and as rarely as yazoo beer comes out this way, its certainly hard to pick out any specific thread that i am already familiar with, and while wine barrels and funky yeast are evident, no particular wine, or yeast, or level of maturity presents itself to me, complex and flavorful as the beer is, if that makes sense. like, this could easily just be a wine barrel aged brett saison thats two years old, any other specifics on it would be guesswork, but i like guesswork, and so maybe some gin barrel component was in here, there is a floral sort of botanical element that could come from that. also maybe some rye in one of the threads, i get a lot of spice at the end of this, some of it must be grain derived. red and white wine barrels likely, on top of melon and lime and stone fruit, there is also a thin darker berry layer that comes out late. sour but not overly acidic, bretty and evolved, lots of wood and high carbonation too, which is always nice in one of these. i wish we could get a little more specific information about all that went into this blend, i like the beer pretty well, but its also hard not to see it as a bit jumbled. glad i got to try this one, but coming in cold without any details makes it hard to fully appreciate all that went into it. still, interesting and wild and funky and fun enough to be worth ordering if you see it around...
