For this batch, we used Pilgrim, Millenium, and Simcoe. It's a unique IPA to say the least. I've never had an IPA with as many different hop flavors, and one whose bitterness sneaks up on you. The first sip, you say, "wow, this is well balanced!" Then the bitterness washes over you like a rising tide, with the enamel of your teeth crying "Mercy!" That's actually a pleasant sensation to a hophead like me.

This review is from the growler I bought at the brewery. This is the third of the hop projects I have had.
Pours a nice transparent medium-dark amber with a substantial white head.
The aroma is big on the hops. A west coast delight.
Wow. A superb IPA. There was no holding back on this one. A citrus bomb and hugely hop forward. A very slight malt backbone is present which makes the hops stand out even more. Some fruit in there as well.
Light carbonation, medium bodied goodness.
Honestly one of the best IPAs I have had. Hugely hoppy. A true gem.

On tap at the Yazoo Taproom.
A - Cloudy deep orange color. Two finger head with excellent retention. Very sticky leaving great lacing down the glass.
S - Very sweet aroma with citrusy hops as well. Strong aroma of grapefruit.
T - Balanced sweetenss initially but quickly overcome by a nice hop bite. Excellent job with the bitterness. Can taste the citrus coming through. Excellent fix for any hop heads out there.
M/D - Medium bodied and smooth feel. Excellent carbonation. Very drinkable IPA.
These guys brew an IPA whenever they can get there hands on enough hops and I am hoping they can find some more soon. This was a very good IPA.
