This Belgian style wheat beer is brewed with soft white wheat, pilsener malt, orange peel, and coriander. Fermented with a classic witbier yeast strain and our house souring blend in oak foeder tank number Nō 4.

So, why would a brewery want to sour a Belgian-styled Witbier? Because when you embrace the funk like does the Yazoo brewing team, you're convinced it will turn out funky, fresh and downright delicious.
Pouring a hazy and lemony yellow, the colors of straw and chrome are brought to life by teaming carbonation and a sprite champagne-like froth. Tangy, peppery and souring scents emerge from the glass while bringing a fruitiness of apple, lemon, lime, grapefruit, grape and melon. Funk and fauna ensues with both a floral and a peppery, briny, woodsy and leathery scent. A crisp and malty upstart allows just enough sweetness to suggest the flavors of sweetheart candies and the floral character trends lightly taffy-like with a sprinkle of powdered sugar.
As the bubbles pop like Pop Rocks candy once Blanche Tank 4 hits the tongue, the sweetness rapidly dissolves to allow the musty and branch-dried citrus to provide a weathered and leathery character to its taste. With suggestions of white wine at heart, the sourness is off-vinegar with a clean acetic sourness and a nearly sweaty sense of brine. A retro-olfactory sensation reveals an impression of damp basement as the late taste turns peppery, oaken and laced with sourdough.
Light, crisp and highly refreshing, this Embrace the Funk ale keeps the wheaty foundation of Witbier along with its bright and floral character while adding what's best about lambic making. The results have the beer finishing sour and spicy with a fast fleeting aftertaste.
