As an offshoot of their Embrace the Funk series, Yazoo Brewing takes their sour and experimental flavor to the soda fountain. Loosely modeled after soda mixers, this Fizz Shop variety shares the taste of tropical dragon fruit in a sour, funky, spritzy and playful manner.
Pale ruby-peach and held in a fine haze, Fizz Shop - Dragon Fruit pours loose, lofty and with a bubbly demeanor. As the radiant scent of fresh fruit flesh, citrus, tropical and cider rolls off the nose, so does a briny sense of the sea and a slight musty fruit character. Light on sweetness, the sour ale is light with wafer, nectar and sourdough.
As the bubbles wash away and short lived grain flavors the dragon fruit start to tease with unique simple sweetness of guava and lychee with mild tropical flavors. As more subtle hints of red berry, red grape, apple, plum and lemon add to the beer's natural acidity, the beer trends sour on the middle palate with cleaner nuances of dry oak and light brine. Faint bitterness follows in a late impression of citrus peels and simple syrup.
Thinking of it as a tropical spritzer the sour ale lives up to the Embrace the Funk series with an old school sour tartness but with the simplicity of kettle soured ale. Finishing dry, crisp and refreshing, its slightly off clean character carries a sense of rusticity and charm into a brief and mildly musty aftertaste.
