33cl Bottle @ De Bierboom, Brugge on 4th July 2012.

Ruby coloured brew with a good sized head of white bubbles on top.

The nose was a malt infused blend of yeasty and caramel esters.

The taste was also malt dominated and on the sweet side. Dark fruit feel to the flavours with no bitterness, even as the mouth dries.

Solid body strength: could easily have been a sweet Stout and in a blind tasting that is what I'd have guessed at.

Damn, -10 points for erupting half the damn bottle over my desk, leg, and floor. A Belgian Dark ale shouldn't erupt like that and I wasn't expecting it so that hurt.

When all finally settles it has a darker dirty looking thick foamy head covering that actually isn't very big, over murky super yeast chunk filled, it looks like I have to chew this thing to get it down there's so much yeast in it, and its a dark reddish maroon brown colored beer.

Nose has a bit of fruit, dark plums and tart cherry, little pear, bit of raisin, etc. as well as darker Belgian malts, sweet candi sugar, little creamy, caramel toasty brown malts, and reddish malts with a candy like aroma.

Taste is fairly sweet, candi sugar comes off fairly big, bit of brown sugar as well. Fruits come on raisin, fig, date, pear, cherry, juicy almost. Malts bring brown toasty malts, reddish sweet candy flavors, caramel, molasses, etc. Then a hint of a tart fruit flavor that I think is too much yeast but not really infection, maybe it got too hot but weird. The light chocolate covered caramel candy flavors, and light fig newton filling flavor. Finishes with a touch of cocoa, sweet syrupy malts, brown malts, fruits, quite dry, and brings a hint of bitterness.

Mouth is a bit heavier bodied, decent carb (most was lost in the eruption I think), barely any booze.

Overall aside from the eruption it was pretty good. the sweetness balanced out the booze well, and not overly sweet, and drier finish helps, nice fruits, malts, and sweetness.

Appears a hazy dark brown toned chestnut with a small white head that slowly fades into a gentle cap and collar. Spotty bits of lacing are left around the glass.
Smell is of brown sugar, vanilla, plums, ripened bananas, caramel, cocoa powder, and hints of port wine.
Taste is of the aromas with a touch of black pepper, ripe dark fruit, figs, black grapes, and sugary caramel.
Mouthfeel is full bodied, spicy, effervescent, with fermenting bread phenols lingering in the palate with some hints of warming alcohol.

First had: on tap at Monk's, Philly, PA

I'm sure I had this on tap, but now seeing how rare it seemingly is, I wonder if it was from a cask. It was from the back bar of Monk's and I was sitting in the front, so I'm not so sure now if it was on tap or on cask, but on a typical day Monk's doesn't really keep casks going. I apologize if I'm mistake, but I'm recalling this from old notes. I do distinctly remember this being on tap though, and the bartender did a double take when I ordered it...possibly because I pronounced it incorrectly as "Saint" Canarus. Anyway...

This was poured into a stem glass, a hazy dark brown, lots of carbonation, with a large, frothy beige head. Spicy aroma, boozy, and good quantities of Belgian yeast. Sugar and spice in the taste, licorice and molasses, yeasty, with some dark fruits coming through, but none too distinctive. Pretty smooth mouthfeel, but a bit bitey from the carbonation and alcohol. Still, good and drinkable.

I'm sure I'll never see it again, though I surprisingly found another Sint Canarus brew on tap just recently (5/30/11), so anything's possible.

Sint Canarus Pere Canard is a tasty Belgian Strong Dark Ale that is let down by the smaller details such as the smell and the mouthfeel.

A: I opened my bottle and foam gushed out the top. It hadn't been shaken at all, it was sitting in my fridge for a week! It has a brown colour and the head starts off big but quickly fades to almost nothing. Weird. 3.5

S: Musty vinegar and alcohol. 2.5

T: Sweet and malty up front with hints of raisins. There are some spicy notes from the yeast too. Yum. 4

M: Fizzy. Large bubbles. Like soda. 3.5

O: This is a tasty brew but it's let down by the smaller details. 3.5

33cl into a tulip. Dingy deep dark copper brown. Even with a careful pour only half the bottle fits. When the light tan froth reached the rim I stop - two minutes later the head preposterously exceeded the rim by two inches, very cool. Lacing is ok.

Aroma of a dark Noël with spices of cardamom, cloves and curacao perhaps, clean, not strong but very nice!

Taste not nearly as full of spice as the nose. Not sweet nor bitter nor dry - simply balanced. Alcohol asserts itself at the end but no heat. Leathery, oaky aftertaste evaporates quietly, hint of anise in the finish. Nice medium bodied creamy mouthfeel. Warms well.

Appearance: pours a cloudy brown color with a 1" tan colored head that slowly falls to a thick surface layer and lasts.

Smell: huge yeast nose with big earthy tones and a bit of alcohol.

Taste: nice malt profile with a loads of spicy yeast tones, brown sugar, earthiness, soft cherry and raisin sweetness, and a mild amount of bitterness. Alcohol is quite noticeable but does not really provide the typical warming sensation.

Mouthfeel: medium bodied. Crisp to start, less crips and a bit dry at the finish. Aftertaste is long as the flavors linger in the mouth for a while.

Drinkability: this is listed as a Belgian holiday ale on the label and it definitely fits the bill. This is a true slow sipper to have in front of a warm fire.
