Barleywine with Brett
Appearance: The cloudy amber liquid arrives at the table without much of a head though it leaves a few wisps of lace behind
Smell: While there is the caramel and some hops in the aroma, those are pushed to the background by the crisp balsa wood from the Brett
Taste: Unlike the aroma, the caramel tones are much more discernible on the palate, with the Brett arriving in the middle and driving the finish with its dry balsa wood character
Mouthfeel: Full bodied with low to moderate carbonation
Overall: Combining a Barleywine with Brett sounds like a tough combination and, while I appreciate the experiment, the two aspects clash rather than complement one another
