This beer is subtitled "American IPA", and according to the bartender has a mixture of three typical American hops -- I forget exactly which ones (damn beer!), but the greatest portion is centennial, and I suppose it would make some sense if the other two were the remaining two Cs of the "3C hops" (centennial, cascade, chinook?).
However, this beer doesn't have the in-your-face citrus/grapefruit taste associated with the 3C hops and american IPAs in general. There's a dominating, if rather nice (delicate in tone if not in degree) bitterness, and no other strong flavors are immediately apparent (true to the name, though, there's no real malt taste). However! After drinking for a while, one becomes aware that there are other tastes percolating beneath that bitterness, although it's hard to pinpoint them because they're subtle; the best description I can come up with is that it seems "fruity", in a very pleasant and refreshing way. The result is that despite the strong bitterness, this beer is delicious and drinkable, and... kind of interesting.
BTW, the "iron claw" name apparently comes from some sort of Japanese pro-wrestling move...
