With mild floral hops and a neutral malt base, this pale ale is an exploration of a single yeast strain in all its wild glory: Brettanomyces Claussenii.

Zero Gravity / American Flatbread "B Clause"
on tap at American Flatbread on 6 June 2016
$3/half pint
Notes: 5.5% ABV. Brettanomyces Claussenii. Deep gold-amber body beneath a bright white head that's short lived, dropping steadily to a creamy collar. Only spotty lacing is left behind, but that's not uncommon with Brett beers. Aroma of sweetish/tart fruit (apple) and earthiness with just a hint of mustiness and funk. The flavor delivers subdued Brett, sweetish malt, and apple. In the mouth it's medium-light in body with a moderate carbonation that leaves it smooth despite its gentle acidity. Very nicely done. Highly drinkable, almost compellingly so.

i would have liked this a lot better if i did not drink their other brett pale ale first. that one, called sychak, was absolutely amazing, this one is a little less compelling, but still a very nice glass of beer. this particular strain of brett i am not all too familiar with in a single strain context, so its nice to experience it, although i think its a little odd. the beer is clear for a wild brew, and holds a tall white head on the golden body. it smells a little stinky, cheesy sort of, dried apricots and golden raisins too, nowhere near as clean and bright and fresh as the other one, and frankly a little off to me in the aroma, but its just a new yeast to me. the flavor is better, more well integrated with the slightly sweet pale malt and a grassy earthy even spicy european type hop profile. im not sure more time would help this or not, sweetness is not a problem at all, its just i would like the brett to mellow out and develop a little differently than it has here. either that or i just dont personally care for this strain as much as others. i like the experimentation here though, these guys are always up to something...
