another mostly kettle soured beer from what i can gather that has to be listed as something other than it is because we still dont have a generic kettle sour kettle sour category here on BA, eventually we will get that fixed, but until then, beers get categorized wrong. i suppose this could also maybe fit under wild ale, because there is some brett in it, but it certainly doesnt appear to be the primary fermentation agent here, saison yeast first from where i sit. i didnt love this one, slightly tart and funky session saison with lime leaf and jasmine tea, both ingredients are somewhat subtle here, and the fermentation profile tasted young and not quite all the way developed yet. i had higher hopes for this, but at the same time, didnt at all dislike it, its summery, floral, citrusy, interesting, and understated in the right ways that make it real sessionable. the lime leaf is evident more as it warms, while the jasmine is more in the nose than the taste for me, its a cool combination of stuff, just not maybe layered in ideally. i want more carbonation out of this too, it sags just a little, but its enough to really not fit the style or the flavor profile very well. still a summery complexion, a unique mix of players mingling, but i wanted a little more from the yeast, and from the beer overall. this will be much better next time they brew it i have a feeling, some clear lessons to be gleaned here for sure. fun but underachieving in some way...
