Yuzu is a citrus fruit originating in Central China, but is more popular in Japanese cuisine, where it is used much the same way that lemon is in western cooking. Yuzu’s flavor is tart and fragrant similar to a grapefruit, with notes of mandarin orange and persimmon.

On tap at the brewery into pint glass. Pours fairly hazy pale golden straw color with a small fairly dense white head with good retention. Spotty lacing and streaming carbonation on the glass. Aromas and flavors of big tart/sour lemon, lime, white grapefruit, orange, citrus zest, green apple, white grape/wine, hay, straw, grass, pepper, wheat, cracker, lacto funk, light salt. Medium fruity lactic tart/tang, and spicy yeast finish. Medium-high carbonation and light-medium body. Crisp clean refreshing finish. Balanced grainy malt and lactic/tangy fruit mouthfeel. Slight salinity. Nearly bone dry finish with no pucker and light lingering fruit. Zero warming 5.2%. Huge yuzu citrus vibrancy. Not overly lactic. Fantastic for the style.
