    A note on Double Bastard - if you're going to age it at all, go at least 2 years. It's a mess IMO at 6 months and ~1yr.

    Some other proven beers:
    - Avery Mephistopholes
    - Stone IRS
    - Great Divide Chocolate, Oak, and Espresso Yeti
    - Het Anker Cuvée Van De Keizer Blauw
    - Rochefort 10, Abt 12, Westy 12

    Many of The Bruery's beers are celler-able. Port Brewing's Older Viscosity (which, I haven't seen in a while) another good choice. Crux Fermentation's Tough Love and Full Sail's Bourbon Barrel Stout belong on that list as well...

    I just had a palo santo marron with a year and a half on it massive improvement.

    Can't believe nobody has tossed out FIS yet. This stuff at 3 years will make you buy multiple packs every year just to sit on some.

    I like Goose Island Sofie much more with at least a year of age on it.

    Funny I just had an almost exactly 1 year old Sofie yesterday and thought the exact same thing. The GI ladies need some time in the cellar to go from good to great.

    i opened a 2006 mephistopheles two weekends ago that blew every other aged stout i have had out of the water.

    I had a 2012 Black Tuesday a couple weeks back that blew my mind. Had a Bigfoot verticle tasting a few months ago and the 2009 and 2010 seemed to be unanimously the best of the bunch. Oddly enough, the 2011 was probably the worst. FW anniversary beers are also amazing with a few years on them.

    I've recently had a 3yr old Speedway Stout that was incredible. And a 2.5yr old DFH Palo Santo Marron, completely new beer and fantastic. I Love that one fresh, and it's also so great to see it having aged.

    I personally like Abyss fresh, but have a couple bottles to see what time does.

    Just had a chimay blue with 2 years on it. Was amazing.

    All those English barleywines turn into decadent desert type wines after a few years and I love hoarding them. Been picking up funky weirdo saisons lately to experiment with.

    I recently felt that Brooklyn's black chocolate stout had improved dramatically. Then I realized the four pack was from 2012.

    This is gonna sound weird, but the best "Enjoy Bys" I've had have all been a month or so past their date.

    Even a Chimay Blue with a year on it is outstanding. I'm currently holding a 2012 until 2017.

    Had an '09 Abyss late last year that was really good.

    Orval with 4+ years on it completed changed. I picked up hardly any brett. It became very hot and boozy, but not in a bad way. It was like drinking a slightly carbonated brandy. Drinking it at a 400 year-old bar in Ghent, Belgium could have contributed to the enjoyment factor..
