Soy Saucy Stouts

    I used to get it in "Dragon Stout" (D & G, Jamaica), and rather liked it in that one. :slight_smile:

    I don't get it too often, but it's usually in the stronger foreign/export (American/RIS) varieties, and even in some Baltic Porter.

    BCBS was a drain pour because of the soy sauce flavor. Once it warmed up it was pure soy sauce. Yuck. Dragon's Milk was similar. I did not get soy sauce from Evil Twin or Stone beers as mentioned here.

    BCBS and DM are both BBA so I'm wondering if there is a link.

    Ten Fidy and BA Plead the Fifth both have a strong soy flavor after a bit of time in the cellar.

    Have to say I can't ever remember equating any stout to soy sauce, thank god. Sounds nasty.

    OK, got wondering what this is like since I've never encountered it. Just dumped soy sauce in my BCBS. Soy sauce and cherry infection taste don't mix!!!!!!!!!!!!

    Got some soy sauce in a bottle of 2012 Marshall Zhukov just yesterday. It wasn't prominent and the beer was big enough to mask it, but it was noticeable. It didn't ruin the beer, but it certainly didn't help.

    This is why I don't cellar stouts anymore. There are some exceptions, but whereas some oxidized flavors work well with other big beers like barleywines and scotch ales, I find them to be a real turnoff in stouts.

    I'm with you. I have no idea where this is coming from. I have had a ton of big shouts and never encountered anything remotely close to soy sauce.

    This ranks right up there with claims of onions and garlic in IPAs. Never tasted that either.

    A surprisingly shocking combo that works, I picked it up at a pool bar in Acapulco in the 80s as a child... they served us fresh cut coconut with soy sauce. The flavors worked. It's a mouth waterer and the salty v. fatty sweet is incredibly addictive. I've yet to blend the two in a beer, but the character is one I think would be desirable.

    Me neither. Gubna IMO is a fairly nasty Dipa though.

    Only beer that ever tasted like soy sauce to me was Sam Adams Triple Bock. Horrible stuff. Still have two bottles kicking around from 1995.

    I had a couple bottles of 2012 recently, one was amazeballs and the other was as you describe it. Luck of the draw I suppose

    I enjoyed the beer, but I couldn't help thinking to myself what that would beer taste like fresher.

    It's disgusting. I love soy sauce in foods but the BCBS literally tasted like straight kikkoman. The Dragon's Milk had maybe 2% of the soy sauce bomb that the 2015 BCBS was.I was able to drink and somewhat enjoy DM but drain poured the BCBS. Four people felt the same way about that bottle of BCBS.

    I get soy sauce in a lot of imperial stouts, especially Clown Shoes' Blaecorn Unidragon, and to some degree in Ten Fidy and Founders Imperial Stout.

    I think that even for the same beer/same year, the soy sauce taste will vary. I had a regular 2014 BCBS on tap that was super soy sauce-y (had a group of four taste it, all agreed it had a gross flavor and three said "soy sauce" even with no prompting). But I had regular 2014 BCBS from a bottle and it was fine.

    My guess is oxidization/autolysis in barrel or keg or bottle or wherever, not palate differences as people are speculating (note: I know nothing about these processes). May be some palate differences as to what level is detectable, but a bad case I think most would agree on. It can't be how they are intended to taste.

    I had a crowler of 2014 BCBS a month ago. First half was amazing, but I left the other half in my fridge over night (I fucked up, I know....) and that half tasted like drinking straight up soy sauce.
