    I cracked my first Epitome last night. The can doesn't lie. So much resin. 100 IBUs! It was very good.

    you're pretty much talking about our water per boat and bdg as i have talked about in the past. so far i am still searching for ways to make those outside the atl. high aquifer
    the beers we hope to make with 2 roads are recipes where we treat our water and can facsimile that up in ct. 2 roads is awesome markowski is a guy we've always respected and friends like lawson strumke and jeppe convinced us we could do our thing there. so we are working on sorting that out. looking forward to your thoughts when it comes together.

    my notes on each. as if you cared

    All Orange Everything the bitter is tempered some but is still nice, obvious hop aromatics have integrated nicely and come out as it comes to temp, the orange zest plus malt body is doing a proper marmalade thing right now the body on it is still... zaftig?

    Cosmonaut the malt's bitter has toned out some, the strawberry which really did its thing from june to september is fading now as vanilla steps up. if you are in it for the berry's drink it now other wise it will continue to lose its edges and become a dignified old stout

    Irish Coffee the coffee in this beer when it was young pushed the peppermint to a place only real lovers of creme de menthe were gonna groove on, as the coffee fades the mint has come in line as the beer's toffee body steps up. its cool now and i think will hang there

    Ron's Steam Bock Haircut we made a real maibock here, and then treated it like a pale at the end of brewing. what the late hops and cal lager were doing young has gone its way and now its just pretty gold/amber liquid nice to drink while watching tv

    S.S. Yirgacheffe this is a relic i am sitting on my last 4 but haven't had it in a couple months, i imagine all the aromatics of hops and coffee are buried in what will essentially be a lean pale ale with some fun but confusing aromatics.

    S.S. CREAM that MONEY blast of hops wont pop out the can like it used to but its got the structure to live where it is for some time

    Monkey Chased The Weasel, depends on vintage but i am never ever not happy when my wife lets me drink one always proud of how it hangs on for such a low abv beer
    if you have any of the first canning after year 1 a neat cinnamon aromatic showed up that i have never figured out but it was a lot of fun

    Thanks, Augie. Obviously I care quite a bit. I would imagine the Yirgacheffe will be exactly like you describe it with the coffee fading like it does on Regular Coffee but without all the malt. Should be interesting. I actually cracked my last can of the first Monkey batch this summer and did a side by side with the most recent one. I found the first batch to have a bit more sweetness and fruit character than 2016 which skewed drier with a stronger lacto presence. Both awesome and hold up very well.

    Oh...and I forgot one. Still have an SS Kentucky. I found the bitterness on this one to be quite high (in looking back at my old check ins). I wonder if the smoke may have pushed my palate to think bitter and if some of that has now subsided, it could be a little fruitier/sweeter.

    I might go snag a 4pack. Seem like enough to last the day? I love going to check up on my friends at the brewery but it's just too long of a drive after work some days.
