    There are no nutrients for the yeast in honey, so the yeast struggle. Meads can be made in less time than a lager if you add nutrients.

    Yeah , I used to ferment my meads pretty cool to control any fusels and whatnot, and even those were done in 3 to 4 weeks because I also added yeast nutrient.

    That's obviously not necessary when honey is added to beer because the wort has plenty of nutrients to begin with.

    I tend to give my braggots 8 weeks to finish, just to be on the safe side. Honey is so variable as to its sugar content. Some varietals have almost all monosaccharides, while some have a higher proportion of polysaccharides that take longer to ferment.

    Very true. People have strong opinions and sometimes argue well. My debate professor in college was very agreeable unless he thought you were wrong. His insistence on logic was maddening!

    As mentioned previously, it's a bit of a tease directed at the constant misuse of the term adjunct, not the beers themselves.

    Sometimes the fruit in beer has been used as a fermentable making it an adjunct rather than an "add-junk."

    For example the cherries added while making a Kriek using traditional methods are left in the barrels for several months and there is a refermentation that takes place.

    And the regular bottling of Cantillon Kriek is so dry, stark smelling redolent of cherries, further fruity, with sugar that I don't know of, and I love it for rattling my teeth and opening my eyes.

    The definition I found for adjunct is unmalted grain. Since fruit is not a grain, not an adjunct - according to that definition.
