Mashing in a quad right now, 75 minutes followed by a 90 minute boil. 76% Belgian pilsner, 6% each of Aromatic and Caramunich, with the remainder being D-180. Went with Tettnang to bitter and Czech Saaz for aroma based on AAs and what was available at the LHBS. Pitching a single smack pack of 3787 straight into the wort, which Brewcipher is telling me is ~400,000 cells/ml/Plato for a 2.5 gallon batch. Gonna blast it with 60 seconds and see what happens!

I just brewed my 'Redemtion IPA', with warrior bittering, 50 g each mosaic, simcoe and cascade each at 5 min and 50g each for dry hop. Malt bill was pils with naked oats and rye malt. The last round of this beer was with US05, but this time I pitched a small starter of #17 Midtbust kveik at 33 oC. It is supposed to give some tropical notes and ferment fast. I noticed a steady bubbling after 2 hours. feeling giddy- will I be kegging on friday?

I like the strategy. Very scientific.

My brain saw this differently though.
    All Vienna.
Use just enough chocolate/barley/cocoa for color and a little richness.
Hop the hell out of it and call it a hoppy English Red.

@NorCalKid what model fridge/freezer is that? And did the shelves just pop out, or did you have to perform any major surgery?

Played with my new toy. It clogged right away and i made a huge mess so i drilled the hole bigger on the petcock. Hopefully it works better next time.

I’m guessing the snow acted as more of an insulation than any thing. And actually slowed the cooling process down. I could be wrong though.

Maybe! Not sure. It pretty quickly melted off of the fermenter and left about a 1" gap around it for airflow.

Anyway, it got down to 64F and I pitched and it's bubbling away now. :sunglasses:

Next time, consider piling snow agains fermenter and stiring the beer. You will find the snow melts quick, and the beer cools quicker.
Apply more snow and stir till desired temp is reached.
more work for sure, but faster cooling.
