Unlikely combinations that work for you

    This was another banger I had at one point that reallt drove home the virtues of spent barrel-aged beers. I had it two years after it was bottled but it held up greatly (in that it didnt taste like shit, i have no idea what it was like fresh unfortunately).

    Yellow Rose's Chardonnay Barrel Aged IPA. The regular IPA is solid and I'm definitely NOT a fan of chardonnay but that was a tasty combo. Had it at Whole Foods a while back and would be buying regularly if it was available.

    I've always been a big fan of of herb/spice beers and have had quite a few odd ones. The most recent one by German brewery Buddelship, which I've really enjoyed tremenduously, was a Pale Ale aged in Calvados barrels with apricots, juniper, coriander and seaweed added. Phenomenal beer that once again showed that Buddelship is probably the best maker of barrel-aged beers in Germany right now.

    They also made a Black IPA aged in Single Malt Scotch barrels a while ago which was great as well. I probably mentioned this before, but barrel aging in Single malt Scotch barrels is quite common in Europe, although mainly for Stouts of course, probably because these barrels are more readily available around here than Bourbon barrels. As a lover of Single Malt Scotch myself, I quite enjoy these peaty, smokey Stouts and have often wondered why they never seem to get made in the USA.

    A couple of herb beers that hit all the right notes (for me, anyway) were Deschutes Sagefight Imperial IPA and Boulevard Rosemary IPA, from the Tasting Room Series. These herbs are natural complements to earthy and piney hop flavors, and they work extremely well in IPA's.

    I gotta admit, that one would definitely catch my eye. And I can see it being a pretty uncompromising brew...if done right. :wink:

    This discussion of barrel aged beer, especially wine barrels, has made me realize I don't need actual fruit in my beer to take it to the next level. The aging process provides all the fruit I need.
