Fresh Hop 2020

    IMHO, yes, 24hrs is limit for fresh. The analogy several of us have used over the years is basil. If you're making a pizza, and you go cut a few leaves of basil, and put them directly on your pizza, they are certainly fresh. Now, stick them in the fridge overnight and use them the next day, eh OK. Leave them on the windowsill in the kitchen for 3-5 days before using them? No.

    I personally would never call dried hops fresh, although our friends in Chico love to.

    As far as kilning, I don't know exactly, but it seems that the ranchers try to dry them day of harvest, or maybe day after, depending on timing and equipment needs. Next to my beer glass right now are 3 cones of Idaho 7 hops that were picked last Sunday (9/27) AM, and in the brew kettle by about 2pm. They are dry, almost to the point of crumbling, to the touch, but still smell pretty good. Some browning has happened to the leaves, and no one would call them fresh any more, nor would a processor use them.

    Ya that was my impression on what the hop wranglers shoot for as well. I've only ever air dried the hops I've grown and never brewed with them. With small amounts, air drying seems to work fine and I would think might even be able to make a superior product? Mostly because lower temps preserve more volatiles. But that's not possible at a commercial scale. I'll make it up to hop harvest season one of these years so I can pester the professionals directly with my questions and unsolicited advice:blush:

    Well I guess I don’t know about flash frozen hops using nitroglycerin or crystal meth or whatever the fuck. Some techniques are so new that we might need to amend the rule book. Traditionally, my understanding is that fresh = the time it takes to drive (or fly) from where the hops are picked to where the beer is brewed, but under no conditions more than 24 hours.

    One of our locals made a beet called "fresh frozen cold IPA", I thought it was just like a weed pun or something but this reminds me that I should ask if its made using break sides technique of getting the hops addicted to crystal meth before tossing them in the brew (at least that's what some guy on the internet told me they do). It was a pretty disjointed beer though so I shant be getting more either way. At least if it was made with fresh hops I could add that to the bottom of my short list of beers this season

    Fremont Session Pale was pretty close to a year round non-FH Cowiche variant. Too bad I’m the only one who bought it before they quietly discontinued it.

    Ex Novo just released FH Cozy Chaos WC IPA. on tap at Beaverton....maybe NE as well??


    also checked out Culmination's taplist and it looks like they have a few FH beers on right now as well. anybody had them yet?? FH Phaedrus has been a winner in previous years and would love to run across it this year.

    de Garde is not messing around with their fresh hops offerings this year - instead of just The Frais they are doing three different versions of it!
