Apricot Stouts?

    I've gotten my hands on about 5kg (~11lbs) of apricots for free, and as well as doing an apricot pLambic, I was racking my brains for something else to try.

    Has anyone had any experience brewing Stouts/Porters with Apricot?

    I've noticed that there are a couple that have been released commercially, but I've never had or seen anything (maybe for a reason?).

    Make a regular stout, mash and or boil 1 lb of the apricot , toss apricot into secondary for 2 weeks the carb or bottle condition. The report back and save the rest of the apricot for other beers.

    apricot saison?

    I can't quite figure out what an apricot porter/stout would taste like. Definitely report back if you try it.

    There is a reason why Apricot Stouts aren't a thing. Does anyone sell chocolate covered apricots? No. Apricot IPAs are coming soon, tho.

    Apricot Saison, Belgian Pale Ale, Sour Ale, and Blonde Ale are good applications.

    A client gave my office chocolate covered apricots for Christmas. The apricots were cut cookie sized and half dipped in chocolate. They were fantastic. Will it be a good beer? Hell if I know.

    I'm with Brew Betty. I've had a chocolate orange stout before and it was delicious, but would probably not go for an apricot Stout.

    I'm on this page too. I think the roastiness of the malt would clash with the fruit flavor, but I'll admit that apricots are probably my least favorite fruit to eat so that I'm not sure that I can even begin to appreciate what you're trying to do.

    Yeah, I was wondering about the apricot / roast aspect. I might try adding some juice to a finished stout and go from there.

    For what it's worth, I actually have Peaches, not apricots.

    They also make chocolate covered grasshoppers. Do you want to make a grasshopper stout?

    It appears people are willing to eat everything covered in chocolate, including peaches. Blech!

    Even with peaches I'm uncertain how the fruit flavor will mix with roasted grain. You won't know until you try, but then you have the choices of how much fruit to use vs. light-to-no roast (porter) or modest-to-heavy roast (stout). Per the discussion above, maybe some chocolate malt or cocoa nibs will compliment the fruit to make it all work.

    The reviews sound like it sits in the toffee/cocoa/caramel/coffee/dark fruit camp, with hints of roast - which is what I was thinking of doing. So good to know that my idea has potential at least. :slight_smile:

    I think a peach stout would taste better than an apricot stout. So there's that...

    If I had peaches I would go with a Saison or a Berliner Weissbier, have had both with peaches and think they add a lot.

    I made a peach mead that's 3 years old now and quite nice but for a long time the flavor was unpleasant. I would do a stout or something with enough flavor to cover up the peaches. Apricots taste more peachy than peaches in brewing
