    -> Poll #15 <- determined that the total crystal malt in the grain/fermentables bill will be 7%

    This poll will determine the split between English Crystal Malt (~55L) and English Dark Crystal (~80L).

    If you are not a believer in specifying fermentables by percentages (due to non-proportional flavor/color extraction for different grains at various mash efficiencies, or due to the fact that the Invert Sugar will not be subject to a mash efficiency), the assumed mash efficiency for the grains in the final recipe will be 70%, if that helps.

    When this poll is done, I will look at the data a few different ways to determine the central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff. It all depends on the data.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, the fermentables selected, and the yeast strain selected.

    This poll will be open for 48 hours.

    If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently.

    The Averagely Perfect ESB Recipe so far...

    Target ABV: 5.4%
    OG: 1.053
    FG: 1.012 (77.4% Apparent Attenuation)

    Grain Bill (proportions TBD):
    ---Maris Otter
    ---English Crystal Malt (~55L) (1%-6%, TBD this poll)
    ---English Dark Crystal (~80L) (1%-6%, TBD this poll)
    ---Invert Sugar #2 (4%)

    Yeast Strain: Wyeast 1469

    5 and 2 for me. Keep the darker stuff so color more then much else.

    5 c55 for me. Love the toffee note and its a traditional malt for bitters.

    Simpson's medium crystal, clocking in at 55L, is my favorite-est. 5 and 2 feels right to me, and this beer is looking pretty good to me, so far.

    I'm having really good feelings about where this beer is heading. Come on Citra :slight_smile:

    P.S. I just decided if I ever buy a race horse, I'm naming it Citra :slight_smile:

    I have seen hops in a few of these, and just know, I will do all I can to make sure that citra isn't in this beer. Call me crazy, but I can't do that.

    Still think Citra is a great name for a racehorse

    Citra is a terrible idea for this!!! To me English hop flavor is a defining aspect of an ESB. I don't really think of the ESB as a new age / new world style. I'm not apposed Citra and love it fresh, it just is no longer an ESB; it's an APA or an AIPA.

    There are some newer UK hops I wouldn't mind trying however. Rather than your typical Fuggles, EK Goldings etc.

    Ok...I'm the sole vote at 5% 80L.

    Am I alone because that would be too roasty for everyone else's taste? Or simply out of style?

    C55 is more traditional for a bitter. I think most of us had contemplated just a triffle of C80

    It may depend on the maltster but I think of 80L as the beginning of the raisin territory, albeit not nearly as much as 120-160L types. But I've been trying to work through some 160L crystal in some of my darker recipes and even at a couple ounces it's noticeable. Was hoping for no raisin in this one, if only to contrast it with beers I'm stocked up on now.
