1 gallon dunkle extract suggestion

    I want to make a couple 1 gallon batches of wheat beer. I wanted to work with a yeast I built up from dreggs. I'm just messing around really, and keeping it small scale to keep costs down. For the wheat beer, I am using 1 lbs of wheat DME in 1 gallon of water (post boil) and 3.5 grams of Hallertau at 60 minutes. What should I do for a Dunkle? I have another lbs of wheat DME on hand. What should I use for steeping / specialty grain? I'm not opposed to chocolate or coffee notes (sounds nice to be honest). I don't know much about what grains impart what flavors on beer, so this could be a good learning experience for me.

    Step 1. Spell Dunkel correctly. :wink:
    Step 2. Steep some carawheat and dehusked carafa. (Not much needed for a 1 gal batch. ~ 1.5 - 2 oz carawheat and 0.8 - 1 oz carafa)

    Not a grain expert but the article refers Carafa® Special I, II and III as dehusked and are classified as debittered black malts, but the name is trademarked to Weyermann Specialty Malting Company, so it can't be called that by another malter.

    Yes. Carafa Special III is a dehusked/de-bittered black malt. ~ 1 oz in your one gallon batch will impart the color you want for a dunkelweizen without adding bitter overly-roasty notes to it.

    If I used 1.5 carawheat, .8-1 oz debittered black malt, and .8-1 oz pale chocolate, would I get a chocolate like flavor from the pale chocolate? Or would it just be too much specialty malt for a 1 gal batch?
