100% Brett Fermentations

    Looking at some presentations I'm not sure where you got that. What you might be thinking of is the WL packs their vials for bottle conditioning and not primary fermentation.

    I think I remember reading it in an interview with Surly's head brewer back when they released Surly 5. Supposedly Chris White of White Labs suggested he pitch 8 times the amount of brett for a quick fermentation. Of course, I read the interview over a year ago, so who knows if I'm remembering correctly.
