Greetings! For a brewing science class we are having a recipe competition and I was wondering if I could get some feedback on this recipe. I took inspiration from Modern Times Neverwhere, and Crooked Stave Hop Savant. Thanks for your feedback in advance. http://beersmithrecipes.com/viewrecipe/392252/project-100-brett Peter
I think wy brux would be a better choice (wl can be fecal and have a bit too much horse blanket) I like the nz hops just not too sure how they will mesh w columbus. Also 30d dryhop time is a bit excessive
it looks great. switch CTZ to bittering and save Galaxy for aroma/flavor. 30 day DH is stupid. Go 3-5 days max. Huge pitch of brux. Ethyl lactate will compliment those fruity hops well. Good luck
Why the aciduated malt? Do a partial sour mash and get the real thing. Also, 30 day dryhop is pretty crazy. 7 days is as long as I would go.
Thanks for the advice! So if I cut the Columbus hops, should I replace them with something else? Maybe Chinook? I'll certainly drop the dry hop time down to 7 days. As far as the acid malt goes, I have read that adding it up to 10% of the grain bill helps lower the pH and makes the conditions more pleasant for Brett to do its work.
