    RR sours
    Avery sours
    Expedition
    Third Coast
    Adam and variants
    Fred and variants
    BCBS
    Ten FIDY
    Blackout Stout
    Arcadia's bigger beers

    What else can I look for?

    north coast old stock

    can't think of the others if there are any (not at home). keep forgetting to just pick up a 4pk of brooklyn black chocolate stout and throw that in there.

    They say Dogfish Head Palo Santo Maron cellars extremely well. I'm aging some now, but haven't tried it yet (at least, not aged).

    Pannepot, Pannepeut, Black Albert, Black Damnation Variants... in fact most of Struise ages incredibly well, Pannepot seems to improve dramitically.

    2x Founders Breakfast Stout
    2x Founders KBS
    1x 't Smisje Catherine the Great
    1x Brooklyn Monster Barley Wine
    and another Belgian, whose name escapes me right now

    I'm aging a few as well. I've had it with a year or so on it and it mellows out very nicely, can't wait to see what comes with even more maturity.

    Personally, I use cellaring to experiment and to collect verticals of things that I know I like. FIS, Expy, Backwoods, KBS, BB4D, BB Pt5, Arcadia BB Shipwreck, and Kuhnhenn BBBW are things I am currently interested in building verticals of.

    I'm laying down a couple of Jolly Pumpkin Grand Reserve bottles just to see what happens to them over time. If I had access to 3F Oude Gueuze or Cantillon 375 mL bottles on a regular basis, I could see myself laying those down for a bit, too.

    Orval is another personal favorite that should occupy some cellar space, and you won't even need to trade for that one.

    Lately, I've only been dabbling with Samael's. Meph I don't like fresh or with any amount of age so I don't bother. The Beast I absolutely love fresh, with some age it definitely mellows. But to be honest I don't feel that it's all that hot to begin with. Things definitely get a bit more interesting though. Samael's, though, ages extremely well I think. The booze settles, the caramel/toffee bits rise to the forefront. I just tested the '06 and I'm still letting that one go... there's still some potential. Cheers!

    I've got 3 year old Palo Santo and had a bottle just a few weeks ago. I was't a big fan of it fresh but I liked it so much aged I am buying a case to sit on. It gets really good.

    It's pretty tasty at 2-3 years. Haven't had it older than that.

    Also to the OP, I wouldn't age any RR sours or any American wild ale for that matter.

    Damn I'd really like to try a bottle with a couple years on it. I've never been much on aged beers but I love this one fresh and it just seems like it would age so well. Every now and again I try to get some to age but it always goes fast..
