I’m thinking about entry a Kolsch I brewed which I added Brett B to. The Kolsch yeast took the brew from OG 1.052 to FG 1.012. Then I added Brett. I did not take a FG after adding the Brett, this was a small 1-gal batch test and I didn’t want to use the volume. The brew has a nice delicate flavor, almost sessionable if I didn’t know this is 6.5%+. It is dry of course. Light bready, a very small amount of honey flavor, small fruit esters and a tad hop spice. Brett gave a medium to medium-heavy funk nose and the medium-light to medium funk flavor; Brett flavor is increasing and by competition this will be more. 28B or 28C? Thinking 28B.

It's 28A. Only put in 28B if it's sour. Only put in 28C if it's got herbs, spices, or wood.
