I think an ice bath will take considerably longer that a chiller but you have to go with what you have. Ice in a deep container with some water with some (rock) salt and at least as deep as the wort will be the best way to do it. An occasional stir of the wort with your sanitized brewing spoon will also help.

If I’m brewing a new recipe I will almost never make 5 gallons of it

I always design labels for my beers and print them on my inkjet printer as I described above. However, for one of my daughter's wedding she requested a "Wedding Ale" that used a recipe that I had previously made that she had liked. She's a graphic designer, so she designed the label and put it on a finger drive. I took it along with peel-and-stick label paper to Staples (in case they didn't have the right-sized label paper) and they printed them for me at a reasonable cost.I

You can also do a search of titles in this forum using 'labels' and you'll get several threads about printing them.

Never mind about the search, here's a link:

Hey buddy it Jason in Tenn. Glad your getting started brewing. I’m still new too so I don’t have a lot of advice but I can say I agree about 1gallon of beer in a 5 gallon bucket would be hard to bottle without losing a lot and not sucking up your yeast cake at the bottom. If you just follow the directions that come with the 5 gallon kits you won’t mess it up. Can’t wait too see some brew pics!!
