2005 Cantillon Iris

    Has anyone tried this lately? I'm curious how it's tasting and whether I should open this yet. Thanks!

    2005 vintage date or cork date? The vintage date (corked 2007) was still tasting remarkably fresh earlier this month, some earthy hop flavor remaining, good mellow acidity. I haven't had a 2005 cork date recently, but I did have a 2004 (cork) a couple months ago, and it was getting into the older stage of Iris... slightly watery mouthfeel, not much hop presence remaining, terrific sourness and mineral/grain flavor.

    yeah i drank one in August, side by side with most recent bottling. I found it did have a minimal amount of hop bitterness but was excellent and a little more round and full than it's contemporary version.

    Thanks folks! It is the 2005 vintage with a March 2007 cork date.

    its been at least 2 years since i had mine but i thought it was stunning, no way it could be getting worse
