So I have 2 bottles of Dogfishhead World Wide Stout that have been sitting in my aging cooler in the cellar for several years now. I know RIS's get better with age, but at what point would this beer stop getting better? Should I keep aging them or just drink them?

I have heard on this site that five years is the minimum for WWS to start tasting good. I'm sure an extra year on that isn't going to hurt you. I've never had a WWS (I also have two aging), so I can't speak to when the optimal aging is, but if what you're worried about is them being bad already, worry no more.

I recently opened an '09 and it was boozy as hell.

    Drink one maybe?

Just opened a 05, it was sublime, and so friggin smooth. I net it us good, but more time definitely won't hurt.

I'm going to wait on them; in WI, they are not easy to come by (DFH hasn't come back just yet). They're not quite at that five-year sweet spot that some BA alleged to me the last time this question came up. Given your "boozy" comment, I may even give one of them an extra year or two.

This is not always true. VERY FEW Russian Imperial Stouts get BETTER with age. Is WWS one of them? I think it's in drinkable at any age. But Expedition stout? Now there's an RIS that improves with age!

My $.02, drink one now, then see if you want to wait another year or two. Keep in mind what aspects of the beer will change; boozy will begin to drop, rough edges will be smoothed, but it also may oxidize and taste like cardboard.

    Good luck!

I just had a 2010 WWS in a blind taste test with KBS, BCBS, and FBS....and it placed 3rd, and i had a hard time picking 2nd and 3rd place (2nd being BCBS and 3rd WWS)....so IMO, even at 3 years out it is an epic beer...it all depends on ur palate

Depends on wether or not you've been aging them in the proper conditions, as well as the ABV content. Something like WWS (which is about 18% ABV), could possibly keep for a couple decades if cellared properly. I think 6 years would justify you cracking one open, honestly! After that, I'd wait until the 10 year mark!

Opened a 2007 two weeks ago. Was drinking awesome. I brought a 2004 bottle to a tasting in 2011 and while some people liked it, others complained about cardboard.

I guess I like cardboard flavors though.

Have you had WWS before? What's the oldest you've had it?

Expedition is 1 of 3 RIS's that I can agree markedly improve with age. The others being Dark Horse Plead the 5th and Great Divide Yeti. I find a lot of them really begin to fall off after about a year and a half. Always fun to experiment though.

I just opened up a 2008 last week and it was drinking really nicely. Tons of dark fruit and licorice flavors with a nice subtle char on the back end. Smooth booze. It's noticeable but works nicely with the hefty malt base. There's a nice sherry like oxidation that also has some leathery components in the periphery. Still a sipper, but doing damn fine. Only good oxidation notes at this point.

I opened a 2006 last year, and oxidation was just beginning to make its presence known. I wouldn't drink it much older than that (6 years), unless of course I was planning to let it sit for another 9 or 10 (or more) years.

If I'm not mistaken, they're not making WWS anymore. That might not be true, but I remember reading that here on this very site.

Anyway, the oldest I've had was four years and it was considerably better than the three year old bottle I cracked next.

I know they did go on hiatus for a year (maybe 2011 or 2012??) but they're scheduled to release it in December '13

Yeah, there was no 2012 bottling. Kills me that breaks my vertical back to '07.
