First of all, relax... This is NOT one of the all to often seen "Bashing this years batch" thread... :stuck_out_tongue:
I drank 1 bottle of this, loved it and have another. Just curious though, does Parabola age well? I would like to see what it's like with a year or more on it, has anyone experimented with this brew?

yes no matter what people say parabola ages very well
i even had a discussion with Mr. Walker about that at the last tasting i saw him at and he states" that Parabola is meant to age" also recently drank a 2010 parabola and OMG was so good if you can just wait a year or two and try it again and you will definitely see that it is much better

Mellows out a lot. Some people like that. I tend to prefer my barrel aged imp. stouts with a bit more barrel-character.

It ages fine. I've really liked 2010 when I've had it, but 2011 doesn't seem to have changed all that favorably. I'm not really hanging onto many specifically to age them, mostly keeping a vertical together because I have it and keeping some around to drink because I like the beer.

EDIT: Also you should have posted this in the cellaring forum, it'll probably get moved there anyway, but just FYI.

as far as Massachusetts is concerned, I think I speak for most of us when I say "There was no Parabola in 2012 here"

had a 2010- it aged very well. I think Stone RIS ages a little better.

Will they taste great after a couple years? absolutely
Will they be better? meh, maybe, it's not worth years to find out when it drinks so wonderfully fresh.

A year won't make it that more amazing, as it already is amazing. You can age, if you can resist the temptation of drinking it.

It tastes "different" with age, imo.

I prefer it with about 6-8 months. I have had the bottle fresh (amazing), with about 7 months (super amazing), and then with about 15 months in (not so amazing).

I completely agree. I recently did a '10, '11, and '12 side-by-side with a tasting group. Unanimously, the '11 was the favorite. While '10 was good and quite easy drinking, the rich barrel quality had subsided.

it ages just fine, however it also drinks great fresh, and i dont think it gains that much character when it ages, ill tell you one to age is abacus im drinking 2011's right now about 2 years on them and they are mellowing out fantastic

I was blown away the first time I had Parabola about 4 years ago at the GABF. It was one of my favorite beers at the whole fest. I've never aged one, but think it is one of the better imperial stouts out there.

Maybe so, but @ $15 a bottle and room to spare, I'm willing to keep them a little colder if the brewery says I should. Note the language they use: "...will allow them to best age..." They're not necessarily saying the beer's going to get any better, only that this is the best way to keep it from getting worse.

They will age faster. Simple as that.
